This is a very simple technique that will enable you to create 3d text without the use of filter effects! This is one of the very first techniques I learned that I found on about.com.
Step 1: Set the fill color to none and using the pen tool, create an arched path as illustrated below.
Step 2: Using the type on a path tool, type the desired text in the color of your choice as illustrated below.
Step 3: Convert the text to a shape/outlines and group together.
Step 4: Select the group, copy and paste it and press ctrl+shift+[ to send to back. Choose secondary color and scale the new group while holding the shift key down to maintain aspect ratio. You can reposition if desired, or leave it as is.
Step 4: Select both groups and double click the blend tool. Select Specified Spacing in the drop down and set to 50 or better (I set it to 100 because it is better for print). Once you have done that select the same point for each group by clicking the anchor. I chose the bottom left anchor for the bottom and top.
Step 5: If desired, you can create an outline by copying and pasting the new image and sending it to the back. Give it a stroke of 2px and you're done!
